Recipe by White Light Food

As part of the Independence Day exclusive menu, asian food brand White Light Food is offering Tricolour Sushi and Tricolour Dimsum Boxes. Recreate their tricolour Sushi at home with this easy to follow recipe.

Ingredients
1 Avocado
1 Cucumber
2 cups Sushi rice or sticky white Japanese short grained rice
Sushi vinegar
Sake wine
Mirin wine
Nori sushi sheet
Sugar powder
Cream cheese
Mayonnaise
Sriracha sauce
Tomato ketchup
Tabasco sauce
Chilli oil
Salt

Method

For the Sushi rice
Boil the rice
Add Sushi vinegar, mirin wine, sake, sugar and salt into it.
Divide this rice into 3 parts.

For the Spicy mayo Sushi: Saffron
Add chilli oil, Tabasco sauce, sriracha sauce and tomato ketchup in mayonnaise to make spicy Mayo.
Mix this into the first part of the sushi rice.

For the cream cheese Sushi : White
Add cream cheese and Mayonnaise into the second rice part of sushi rice.

For avocado cucumber Sushi: Green
Add avocado and cucumber into the third part of sushi rice.

Rolling the Sushi
Layout a bamboo mat or rectangularly folded towel on a flat surface.
Position the nori sheet on top, then use a spoon to spread the rice into an even, thin layer. Leave an extra half-inch or so of nori uncovered for sealing later.
Start rolling the rice and nori, roll over the top of the mat or towel and carefully compress.

After transferring the completed sushi roll to a cutting board, use a sharp knife to slice into the nori and create equally thick, coin-shaped portions.
Plate it in a tricolour order and serve.
