Chrysanthum Poached Prawns
Ingredients
• 8 fresh prawns
• 12 chrysanthemum flowers
• basil leaf
• 20 ml olive oil
• salt/pepper to taste
Method
Keep water for boiling and add some chrysanthemum flowers and basil leaf to make a flavoured liqueur.
Devein and clean the prawns, wash nicely and poach in flavoured liqueur. When the prawns are cooked, keep them aside.
Make an emulsion of olive oil, salt and pepper.
Now arrange the rest of the chrysanthemum flowers on a serving dish, arrange the prawns on the top.
Pour the olive oil emulsion over.
Serve cold.
It can be served hot also. This can be accompanied by a salsa or a mustard mayo.
