Hibiscus- scented Chicken Drumsticks with Basil & Garlic
Ingredients
• 8 chicken drumsticks (legs)
• 20 red hibiscus flowers
• 60 ml olive oil
• 60 ml oil
• 8 g salt
• 80 g garlic, peeled
• 8 g black pepper powder
• 20 ml lemon juice
• 16-20 basil leaves
Method
Take cleaned and de-skinned chicken drumsticks and remove the extra fat if there. Thinly slice the garlic and chop 8 hibiscus flowers. Rub salt, pepper along with chopped hibiscus flowers and 10-12 basil leaves on the chicken drumsticks so all parts of the chicken are covered, Rest this for 10 minutes. Add the lemon juice and again rub the chicken well and finish with the oil. Pre- heat the oven at 200° C and using a baking tray, cook it for 20 minutes until done. Baste the baked chicken drumsticks with olive oil (40 ml) once the chicken is taken out of the oven. Plate the chicken clean without any residue. Now take the balance hibiscus flowers, basil leaves and marinate with olive oil and lemon juice. Add salt and pepper as accompanying relish on the plate. Garnish with the garlic flakes from the baked chicken tray and serve hot or even warm.
