Steamed Scallops with Chive Flowers                                

Ingredients

• 12 scallops.

• 60 g garlic

• 100 ml olive oil

• 20 g bird's eye chilli

• 20 g ginger

• 60 ml lemon juice

• 36 chive flowers

• 15 ml honey

• salt to taste 

 

Method

Finely chop the ginger, garlic and bird's eye chillies together and mix well with honey, 24 chive flowers and olive oil (40 ml). Clean and wash the scallops and put them on a perforated tray in a pre-heated steamer or over a boiling pot for 7 to 8 minutes till the colour of the scallops becomes opaque.

Line the chilli-chive flowers in olive oil emulsion on the base of the plate and put the steamed scallops on top. Mix the lemon juice and the rest of the olive oil with salt and pour on top of the scallops.

Garnish with a chive flower and serve it as soon as possible, steaming hot.
