Barley Millet/jau keeps the colon and intestine healthy. It is rich in many nutrients and packs some impressive health benefits. It’s an excellent source of fibre, keeps your body toxin-free. Barley helps food move easily through the gut and promotes a good balance of gut bacteria, both of which play important roles in digestion. It is significantly efficient at maintaining a healthy colon and decreasing the chances of colon-related diseases.
By keeping the intestine in proper health, barley helps regulate the movement time of faeces and keeps your stomach clean.
Ingredients
• 1/2 cup jau (barley pearls)
• 1/2 cup gud (jaggery), grated or powdered
• 1/4 tsp jaiphal (nutmeg powder)
• 2 tbsp desi cow ghee
• 1 tbsp gond (edible gum)
• 1 tbsp kharbooja beej (muskmelon seeds)
• water as required (minimum 4 cups for cooking barley)
Method
Wash barley pearls well and soak for 2 hours. After that, drain the water and transfer to a strainer.
Heat 1 tbsp ghee in a pan on medium heat, add barley pearls and roast until it gets a roasted aroma and the colour changes to light golden.
Then add jaggery powder, nutmeg powder and water, now stir continuously until well-combined. Reduce the heat to low and cover the pan with a lid, simmer for 20 to 30 minutes, stirring occasionally until the barley is cooked to tender.
When done, the grains should be separate and not mushy and sticking together. Allow the barley to rest, covered, for five minutes.
Now take another pan, add 1 tbsp ghee and fry the muskmelon seeds and gum, one by one, and transfer to a bowl.
Stir in the ghee-fried gum and muskmelon seeds to the above mixture.
Jau ka Meetha is ready to serve.
