For chaas tadka

• 1 tbsp mungphali ka tel (groundnut oil) • 1 tsp rai (mustard seeds) • 1 tsp jeera (cumin seeds) • 10 meetha neem, (curry leaves) • 1 hari mirch (green chilli), finely chopped • 2 tbsp dhaniya patta (coriander leaves), finely chopped • 1 tsp moong dal (yellow split lentil)

• Himalayan salt to taste

Method

For the vadas

Grind kodo into a paste with the help of very little water. Batter consistency should be thick.

Take out the batter into a bowl. Add cumin, chilli flakes, crushed black pepper, sugar, fresh lemon juice and salt. With the help of your palms, mix nicely for around 4-5 minutes (make sure the consistency of the vada batter is perfect. If thin, then the vadas will absorb oil and if thick, the vadas will be hard).

For the chaas

Take a mixing bowl. Add curd and little water, and salt. Whisk well. Then add rest of the water and whisk again. Now chaas is ready.

The next step

Heat oil in a kadhai.

Drop spoonful of batter in the hot oil and fry until golden brown. Make sure the flame is on medium to low.

Make all the vadas in the same manner.

Take out the vadas onto a plate and then put them into the chaas.

For chaas tadka

In a pan, heat oil. Add moong dal, mustard seeds, curry leaves and cumin seeds. Fry until the dal turns golden brown.

Take the pan off heat and add this tadka into the chaas and stir gently. Finally, add green chilli and coriander leaves.

Now, chaas vada is ready, serve after 15 minutes.
