Kutki & Black Carrot Salad
Foxtail millet/kutki is an antioxidant and a powerhouse of nutrition. Antioxidants play a big role in slowing down the process of aging, wrinkles and other age-related problems, it helps to calm skin irritation, too.
Ingredients
• 1 cup (foxtail millet), kutki
• 1 kali gajar (black carrot), medium size
• 1 medium size onion
• 2 hari mirch (green chillies)
• 1 tbsp dhaniya patta (coriander leaves)
• 1 tsp tamarind
• 1 tbsp sarson tel (mustard oil)
• 1 tsp jeera (cumin seeds) • pinch of hing (asafoetida)
• pinch of haldi (turmeric) powder
• water as required
• Himalayan salt to taste
Method
Wash and soak kutki for at least 1 hour. Now take a pot or a deep pan and put it on a medium flame. Add the water and let it boil. Once it has started to boil, add the soaked kutki. Let it cook until soft and tender. Take a lid and cover the pot/pan, let it simmer for a while.
Once done, switch off the flame and keep aside.
Meanwhile, finely chop green chillies, onion, black carrot and coriander leaves and keep aside. Also soak tamarind in 1 tbsp water.
Take a frying pan and add mustard oil. Heat it over a moderate flame and add cumin seeds. Sauté till cumin seeds start to splutter. Then add pinch of hing and haldi powder and immediately add cooked kutki in it. Sauté well.
Now transfer the mixture into a big mixing bowl, then add chopped onion, chopped green chillies, chopped black carrot, strained tamarind water, and chopped coriander leaves.
Mix it well with the help of two spoons. Finally check seasoning and serve fresh and warm.
