Stir Fry Ghevda

Ingredients

• 200 g ghevda beans (common beans)

• 1/2 tsp turmeric powder

• 1 tsp cumin seeds

• pinch of asafoetida

• 1 tbsp desiccated coconut

• 1 dry red chilli, chopped

• 2 green chilli, shredded

• 10 garlic cloves, cut in two

• 1 tbsp mustard oil

• Himalayan salt to taste

 

Method

Take common beans. Trim off the tips on each end and cut or pluck the beans into roughly 1" length and wash them.

In a steamer, add 1 cup water and steam the plucked beans for 3 to 5 minutes.

Heat oil in a kadhai and splutter cumin seeds.

Add chopped green chillies, chopped garlic, and asafoetida, sauté well.

Now, add dry red chilli, turmeric powder, mix all well.

Add steamed common beans and salt and sauté well, let them blend with the spices.

Garnish with the desiccated coconut and serve.
