Sweet Potato Baked Yogurt
Ingredients
• 550 g full fat yogurt • 400 g condensed milk • 80 g milk powder
• 200 g sweet potato • 10 g finely grated zest of an orange • 8 g ginger powder • 2 g cinnamon powder • 2 g star anise powder • 250 g sugar
Method
Wash, peel sweet potatoes, and rub with ginger, star anise and cinnamon powders in a bake dish with a cover, or seal it with foil. Bake it at 220o C for an hour. Once it is done, mash it, add some butter and leave it.
Also leave the yogurt in a netted chinois or muslin cloth to remove the extra moisture.
Pre-heat the oven to 180o C.
Baking
In a mixing bowl or stand mixer, put all the ingredients on slow speed till it gets creamy, especially the sweet potato.
Empty into a baking dish or ramekin, ceramic or cast iron oven-proof dish. Place the dish in a high-sided roasting tray and fill the tray with hot water to about 3/4 of the way up the sides. Bake for 60 minutes until it starts to turn golden and sets.
Remove from the oven, take out the water bath and allow to cool at room temperature.
This can be served warm, hot or chilled, and each carries a different texture and feel.4
