Tamatar Halwa
Ingredients
• 300 g ripened tomatoes • 160 ml tomato juice
• 80 g ghee • 60 g yellow raisins • 60 g cashew nuts
• 60 g cornflour • 20 ml lemon juice • 300 g sugar
• 10 g cardamom
Method
Wash the tomatoes, cut them into quarters. De-skin and coarsely cut them. Take a bowl, add the tomato juice to these cut tomatoes.
Heat a kadhai or a heavy-bottom pan. Add the ghee to it. Hand-pound the cardamom and add these to the ghee followed by the tomatoes. Keep stirring or 5-7 minutes on a slow heat and add the sugar and yellow raisins, and cook over slow flame, stirring well.
Keep stirring the mixture until it thickens slightly. Mix cornflour with two spoons of water and add to the mixture, stirring well. Add lemon juice and stir well.
Keep on stirring the mixture until it thickens well and attains the consistency of halwa.
Finish with cashew nuts just before serving.
