Grilled Scallop in Mango & Saffron Sauce

Ingredients        

• 3 scallops

• 50 ml mango pulp

• 100 ml mango juice

• 12-15 saffron strands

• 1 g kaffir lime leaf

• 5 g lemon grass

• 2 bird's eye chilli

• 25 ml fish sauce

• 5 g sugar

• 10 g coriander root paste

• 5 g corn flour

• 10 ml olive oil

• salt to taste

For garnish

• 1 fresh red chilli

• 1 spirg onion

• 30 g cucumber juliennes

• a pinch of saffron

 

Method

Marinate scallop with 5 g coriander root paste, sugar, fish sauce and salt, finish with corn flour and keep aside. Put oil in a pan, sauté garlic, chilli and lemon grass. Add 5 g coriander root paste, and sauté. Add mango juice, mango pulp, saffron and kaffir lime leaf; cook it till it reduces to half. Cool it, make a paste in the mixer and strain the pulp. Keep aside. Grill the marinated scallop and glaze some sauce on top. Place scallop on a plate, pour some sauce over.

Garnish with saffron, cucumber juliennes, diced red chilli and spring onion sprig.
