Lamb Nalli Nihari
Ingredients
• 10 mutton shanks
• 1 kg onion slices
• 650 g tomato puree
• 500 ml refined oil
• 100 g ginger paste
• 100 g garlic paste
• 500 g yogurt
• 50 gm Kashmiri chilli powder
• 5 g saffron
• 20 g turmeric powder
• 30 g cardamom
• 30 g cinnamon
• 30 g black pepper
• 30 g black cardamom
• 10 g bay leaf
• salt as per taste
• 20 g garam masala powder
Method
Heat a thick-bottom pan and add oil. As the oil heats up, add whole garam masala and onion slices, and sauté till golden brown.
Add mutton shanks, sauté it for 20 minutes. Then add ginger-garlic paste, garam masala powder and keep on stirring till the aroma of garam masala and raw ginger-garlic paste evaporates. Add Kashmiri chilli powder and turmeric powder. After 2-3 minutes, add tomato puree, and yogurt. Add the saffron and keep cooking on slow flame till the oil comes up. Add 2 ltrs hot water and cook it on slow flame for about 90 minutes.
