Falafel Rolls
Ingredients
• 1 pack of Switz Spring Rolls Sheets
• 20 pieces of falafel
• 2 tomatoes
• a bowl of boiled chickpeas
• pickled cucumber
• 2 tbsp of chopped parsley
• hummus with tahini
• sumac for garnish
• salt and pepper
• lemon juice
• tahini
• hot green pepper
• clove garlic
• slurry
Method
Grind the falafel in a food processor until we don't have any big falafel lumps left (but not too fine either).
Chop the tomatoes, pickled cucumbers and parsley and add them to the mixture and add salt and pepper to taste.
Take Switz Spring Roll Sheet after thawing for 45 minutes and add two tbsp of the prepared filling on it.
Then we add a small amount of chickpeas on it, distributing equally along the filling. We fold the end of the roll that is facing us over the chickpeas, then fold the sides, wrap the roll and finally seal it closed with flour and water (slurry).
Air-fry the rolls till golden brown and serve them with tahini sauce and green pepper sauce, hummus with tahini and sumac for garnish.
To prepare the tahini sauce: We add a quarter cup of tahini, lemon juice, salt and pepper, whisk and add cold water to reduce the sauce texture until we get the appropriate liquid consistency.
To prepare the hot pepper seasoning: In a small food processor, finely chop the green pepper and garlic, then add lemon juice, salt and pepper to taste, and stir well.
