Quinoa Khichdi

Ingredients

• 50 g black quinoa

• 50 g white quinoa

• 40 g chopped onion

• 30 g chopped tomato

• 15 g chopped garlic

• 5 g chopped green chillies

• 80 g yellow lentils

• 15 g degi chilli powder

• 10 g turmeric powder

• 50 g Basmati rice

• 10 g cumin powder

• 50 g ghee

• salt to taste

• 15 g chopped coriander

Method

Boil the rice and lentil all together to mushy consistency and keep aside.

Boil both the quinoa all together till soft, strain it and keep aside.

Heat ghee in a pan, Add chopped garlic and cook for one minute. Add chopped onions and cook till transluscent. Add chopped tomatoes and cook for 3 minutes. Add chopped green chillies and powdered spices and cook for 2 minutes.

Add boiled lentil-rice, quinoa and cook for 3 minutes.

Add enough water and cook for 5 minutes on low flame.

Finish with chopped coriander and serve hot.
