Braised Chicken Drumsticks with Soy & Plums
Ingredients
• 6 chicken drumsticks, skin off
• 50 ml light soy sauce
• 50 ml dark soy sauce
• 4 plums
• 1 tbsp ginger, sliced
• 3-4 Thai red chillies
• 5-6 cloves garlic, sliced
• 2 to 3 stalks (about 2”each) spring onions, white part only
• 200 ml chicken stock
• 2 tbsp hoisin sauce
Method
In a pan, add all the ingredients except the chicken drumsticks.
Simmer the liquid for 10 minutes.
Add the drumsticks and simmer for 35 minutes until they are nicely cooked.
Remove the drumsticks from the stock and rest until needed. Reduce the stock for 10 minutes. Then blend the sauce until smooth.
Return the sauce to the stove and add the chicken and simmer for 10 minutes.
Serve hot and enjoy.
