Sundried Tomato Handvo

Ingredients

• 1 cup suji

• 1/2 cup besan

• 1/2 cup yogurt

• 1/2 cup grated carrot

• 1/2 cup chopped green caspcium

• 1/3 cup chopped cabbage

• 1/4 cup boiled green peas

• 1 tsp chopped ginger

• 2 tbsp chopped coriander leaves

• 1-2 chopped green chillies

• 1/4 tsp turmeric powder

• 1 tsp red chilli powder

• 1 tsp coriander powder

• 1 tsp Eno

• salt to taste

• water as required

For cooking

• 3-4 tbsp oil

• 2 tsp mustard seeds

• 2 tbsp white sesame seeds

• curry leaves

Method

In a bowl, add all the ingredients except Eno along with water if required. Cover and keep aside for 15-20 minutes.

Now heat oil in a pan, add half mustard seeds, sesame seeds and curry leaves. Meanwhile add Eno to the suji mixture and mix it well. Pour the mixture in the pan, cover and cook for 10-12 minutes on low heat. Place the plate over the pan and flip it over it. Heat some more oil in the pan, add remaining half mustard seeds, sesame seeds, curry leaves and slide the handvo, cover and cook on the other side for 10-12 minutes on low flame. Serve hot.
