Aromatic Salt & Pepper Prawns
Ingredients
• 20/25 medium-size prawns, cleaned, deveined, deshelled
• 30/40 cloves garlic, finely chopped and fried crisp
• 8/10 fresh red and green chillies, chopped
• 4/5 green onions, chopped
• 6/7 tbsp cornflour
• 300 ml vegetable oil, for deep- frying
Seasoning
• 1 tsp salt (as per your taste)
• 1 tsp sugar.
• 1 tbsp light soy sauce
• 1/2 tsp white pepper powder
• 1/2 tsp shao shin wine (optional)
• 1 tsp Aromat powder (optional)
Method
Season the prawns with 1/2 tsp salt, add cornflour and coat well, set aside.
Heat the wok/skillet, add 300 ml vegetable oil over high heat.
Once the oil is heated, add the seasoned prawns in 2 batches till they are well-cooked and crisp. Remove the oil from the wok.
Now heat 1 tbsp oil in a wok/skillet over high heat .
Add chopped fresh red and green chillies, chopped green onions and fried garlic, sauté for 1 minute over high heat, then add fried prawns with the seasoning, and sauté everything properly for a further 4/5 minutes, over high heat.
Check if prawns have cooked properly.
Put off the gas, serve the aromatic Salt & Pepper Prawns as an appetiser or as a side dish.
