Chicken Lo Mein (Steamed Noodles, Chinese Greens)

Ingredients

• 200 g boneless chicken, cut into strips

• 200 g noodles, boiled

• 2 tbsp vegetable cooking oil

• 1 bok choy

• 1 carrot

• 2/3 green onions, cut into 2"

• 1 canned bamboo shoot

• 2 red and green bell peppers

• 6/8 cloves garlic, chopped

(All vegetables to be cut medium size)

Seasoning

• 1/2 tsp salt (as per your taste)

• 1 tsp sugar

• 1 tbsp light soy sauce

• 1  tsp Aromat powder (optional)

• 2 tbsp oyster sauce

• 1/4 cup water

Method

Boil noodles for 10 minutes till cooked and place on a serving bowl, covered.

Heat oil in a wok/skillet over high heat, add garlic and chicken strips and sauté for 6/7 minutes till chicken is 80% cooked.

Add vegetables and sauté for 3/5 minutes.

Add 1 cup water/chicken stock and mix well, allow the mixture to boil.

Add the seasoning with 1/2 cup water, made into a slurry and pour over the  chicken and vegetable mixture till the sauce thickens.

Place the boiled noodles in a serving bowl and ladle the chicken and vegetable sauce over it.
