Soya Bean Salad

Ingredients

• 1 cup dried soya beans

To be finely chopped:

• onion, tomato, capsicum, cabbage and coriander leaves

• shredded carrot

• chilli flakes

• lime juice

• salt to taste

The quantity of the ingredients can be varied according to personal preferences.

Method

Soak soya beans for 4 hours and pressure cook with a little bit of salt for 2 whistles.

Once cooled, open the lid, drain the beans and transfer to a bowl.

To this, add the chopped and shredded vegetables, lime juice and chilli flakes.

Mix well and serve.
