Chef Morimoto, Chef Amit Chowdhury and GM Ritesh Sharma unveiling the new menu

With every ingredient flown in from Japan, and Chef Masahuru Morimoto in the flesh himself, Wasabi at Taj Mahal Palace Mumbai was in full celebratory mode. 20 delicious years since Wasabi made an entry into Bombay’s food scene as the first modern Japanese restaurant here…And a new one is on the cards!

We sat down to a perfectly presented lunch at the elegantly appointed Wasabi and a new menu unveiled by Chef Morimoto along with Chef Amit Chowdhury, the Executive Chef of Taj Mahal Palace. Let the festivities begin! But not before the tall cake was cut by Chef Morimoto in his fine Japanese silks and his candor in place. Champagne was popped and the General Manager, Ritesh Sharma, stood proud to be at the helm of the iconic SoBo hotel as one of its gems turns 20!

Seasonal omakase focused on top quality ingredients resulted in the creation of dishes such as the Mizuhiki Seafood Salad with king crab, smoked salmon, tuna, fried onion, cucumber, daikon, carrot and yellow tomato, unwrapped by the Chef himself. Sushi has us feasting on tuna belly, salmon, hirame and hamachi in a spicy roll. Main course put forth options like the Grilled Chilean Sea Bass with yuzu kosho ponzu sauce or the Lamb Chop with sake kasu gochujang yaki with Edamame Garlic Fried Rice, with uni butter. Vegetarians had the Yose Tofu Yuba Ankake with edamame rice and truffle butter instead. Dessert was a delectable treat in the Matcha Basque Cheesecake with fig mousse and musk melon brandy jelly. And we were happily sated enough for an afternoon nap!

From 2001,when the Iron Chef, Morimoto, opened his first restaurant in Philadelphia named Wasabi to 2004 when he brought it to India, to Bombay, to today, with 23 Wasabis across the world, it’s been a journey marked with the best in Japanese cuisine and plentiful awards acknowledging the same.

We look forward to the new Wasabi coming soon to Taj Lands End, Bandra, and more Japanese fare the way Chef Morimoto does it, the Wasabi way!
