Watermelon Sorbet
Ingredients
• 1/2 watermelon (about 700 g)
• 3 tbsp honey or as per taste
• 2 tbsp lime or lemon juice
Method
Slice watermelon, remove the rind and cut into cubes. This would be about 4 cups (about 616 g).
Arrange watermelon cubes in a single layer on a parchment-lined baking tray. Freeze watermelon chunks for 4 hours or overnight.
Add frozen watermelon chunks to the food processor or a high-power
blender.
Also add lime juice and honey to it and puree until smooth. If watermelon is hard and without liquid, then you can add 2-3 tbsp of warm water and press down with a spatula.
Once done, add pureed watermelon to a freezer-safe container.
Smooth out the top and cover with plastic wrap.
Freeze for 2-4 hours or until firm and scoopable.
Scoop sorbet into serving dishes and serve immediately.
