Boiled Eggs with Avocado Mash on Egg Brioche

Ingredients

• 8 large eggs

• 2 large avocados

• 1 tbsp lemon juice

• 1 tsp salt

• 1/2 tsp black pepper

• 1/2 tsp red chilli flakes

• 4 egg brioche buns

• 2 tbsp olive oil

• fresh herbs (optional) as needed

 

Method

Boil the eggs.

Place the eggs in a pot and cover with water.

Bring to a boil over medium-high heat.

Once boiling, reduce heat to low and simmer for 9-12 minutes for hard-boiled eggs.

Transfer the eggs to a bowl of ice water to cool.

Peel the eggs once cooled.

For the avocado mash

Cut the avocados in half, remove the pit and scoop the flesh into a bowl.

Add lemon juice, salt, black pepper and red chilli flakes (if using).

Mash the mixture until smooth and well-combined.

For the egg brioche buns

Slice the brioche buns in half and toast them until golden brown.

Spread a generous amount of avocado mash on each toasted brioche bun.

Assemble

Slice the boiled eggs and place them on top of the avocado mash.

Drizzle with a bit of olive oil.

Garnish with fresh herbs if desired.

Serve immediately while the brioche is warm and the avocado mash is fresh.
