Chicken Curry
Ingredients
• 1 kg chicken • 1 cup grated coconut
• 2 onions, finely chopped • 1 tejpatta
• 2 elaichi • 1.5 tsp garam masala powder
Method
In little oil, roast onions till pink. Then roast grated coconut and whole garam masala. Grind to a paste. Add 3 cups water. Put it to boil, add chicken. Add garam masala powder and salt to taste, simmer till cooked.
Batateche Talasan
French Fries
Ingredients
• 3 potatoes, cut in thin strips as for French fries
• mustard seeds, hing, haldi, dry red chillies to season
• salt to taste
Method
Heat oil, season it with hing, mustard seeds, haldi and red chillies. Add potatoes. Add salt to taste. Cook on slow till done.
Kolambiche Uradmethi
Prawns with Fenugreek and Lentils
Ingredients
• 2 cups washed, cleaned deveined prawns
• 1 small onion, chopped
• 1 cup grated coconut
• 1 tbsp coriander seeds
• 2-3 peppercorns
• 10 dried red chillies
• 1/2 tsp haldi powder
• 1 tbsp urad dal
• 1.5 tsp fenugreek seeds
• 1 tsp soaked raw rice
• 2 tbsp oil
Method
On a hot pan, with a little oil, roast chillies, peppercorns, some coriander seeds, urad dal and fenugreek seeds. Keep aside.
Grind coconut first with coriander seeds and turmeric, then add rice, roasted peppercorns, chillies, fenugreek seeds and urad dal. Also, grind a little of the chopped onions and keep the rest for seasoning.
Heat oil in a pan, fry the remaining chopped onions and brown. Then add the ground masala and bring it to boil.
Add washed prawns and water. Let prawns simmer gently till cooked. Lastly, add kokum and salt.
Serve it with steamed rice.
