Poona Postings: Brasserie Cinq

Brasserie Cinq

Set in a new commercial building on Bund Garden Road in the heart of Poona is a quaintand chic brasserie with beautifully plated, refined cuisine! A simple rectangular space with a bright yellow door and window frames, chandeliers, classic and comfy seating and an open kitchen, where guests can see the chefs cooking and creating their meals with precision and care. There is rustic wooden seating along the window, perfect for a work space, a coffee and dessert with friends or a solo meal with a book!

Chef Patron Amber Rode who has studied at Le Cordon Bleu and worked at restaurants like Café Sydney and La Grande Bouffe, Rozelle brings some of the delicacy and refinement of French cuisine to Poona. He aims to create magic and happiness on a plate for his guests, friends and family.

Brasserie Cinq uses traditional French cooking methods combined with progressive ingredients, plating and combinations. They bake their own breads including an excellent sourdough bread.  Every dish on the menu is carefully described and each element elaborated. Classic cooking techniques such as confit, curing, brining, vacuum pressure cooking, sous-vide are used throughout the menu, The food has layers of flavour and texture.

All the three soups are exceptional, the Classic French Onion has the bite of the dry white wine, nuttiness of Gruyere cheese, a sourdough crouton and veg stock; a Bouillabaisse with Rouille has all the flavours of the traditional Provenu00e7al fish stew; the Curried Butte ut Squash and Apples with Pistachio Granola plays with the palate.

Starters include a Goat Cheese and Spinach Souffle, Chicken Liver Parfait, Provenu00e7al Clams with basil, red chilli and garlic butter, Fish Carpaccio of the Day and Grilled Jumbo Prawns served with a remoulade. Delicately flavoured and carefully thought out.

Salad lovers can try classic French favourites interpreted here such as the Rare Tuna Nicoise and Salad Lyonnaise or others such as the Mud Crab, Grapefruit, Pomegranate and Frisse, the Grilled Peaches, Burrata, Rocket and the Prosciutto, Figs, Goat Cheese.

The next course is the Tartines or sandwiches with a variety of fillings or toppings, all on the delicious home-baked bread; followed by pasta which Brasserie Cinq has included on their menu dressed in very French flavours.

Mains are elaborate and perfect for one person with interesting accompaniments. We tried a few which were really good; a salt-cured, oven-roasted chicken leg smoked with actual hay is served with ratatouille, roasted potatoes and tarragon jus. Pork belly, slow-cooked for 12 hours, seared till golden and served with pea tartare, caramelised onion and potato purée and roasted fennel. Sous-vide Kingfish, slow-cooked and served with spicy French lentils, celeriac purée, potatoes dauphinoise and a citrus tomato basil salsa. Confit Duck Leg slow-cooked with juniper berries for three hours in its own fat, with an apple and beet marmalade, duck fat fried potatoes, kale and caramelised peach.

The desserts are exquisite from a Vanilla and White Chocolate Créme Brulee to a Passionfruit and Dark Chocolate Souffle and a Dark Chocolate Semifreddo with a coffee sponge!
Brasserie Cinq is elegant and chic and hits all the right notes.
