Sweet Potato Kachori with Chatpata Green Apple
For Sweet Potato Kachori
Ingredients
• 300 g sweet potato
• 50 g water chestnut flour
• saindha salt to taste
• ghee for frying
Stuffing
• 2 tbsp grated coconut
• 2 tbsp popped amaranth (rajgira)
• 2 green chillies
• saindha salt to taste
Method
Boil the sweet potatoes and keep aside for 20 minutes for cooling.
In a mixing bowl add grated coconut, popped amaranth, chopped green chillies and saindha salt.
Mix well and set aside.
Peel and grate the sweet potatoes and transfer to the mixing bowl.
Add water chestnut flour and saindha salt to make a nice firm dough.
Make equal-sized dough balls.
Take one dough ball, flatten it and place the coconut and rajgira pops in the centre. Encase the stuffing by shaping the dough with the help of the palm, giving it the shape of a kachori.
Repeat this technique with the remaining dough balls.
In a frying pan, heat ghee and fry all kachoris till they get a nice golden-brown colour and crispy texture.
Once done, remove and place on a kitchen towel to soak excess oil.
The kachoris are ready.
Serve them with chatpata green apple.
For chatpata green apple
Ingredients
• 1 green apple
• 1 tbsp jaggery powder
• 1 fresh green chilli, chopped
• 1 tsp lime juice
• Saindha salt to taste
Method
Place the green apple in a bowl of hot water and set aside.
After a minute, remove it from water and dry with a kitchen towel.
In a mixing bowl, add jaggery powder, chopped green chilli, lime juice and salt. Mix well and keep aside.
Dressing is ready.
Cut and deseed the apple and chop it in small cubes.
Transfer immediately to the dressing bowl and mix it well.
Chatpata apple is ready to serve with sweet potato kachori.
