Potato Cheese Bites
Ingredients
• 1 tsp oil
• 1 cup water
• 1 tsp chopped garlic
• 1/2 tsp chilli flakes
• 1/2½tsp oregano
• 1/4¼tsp salt
• 1 cup rice flour
• 1 cup boiled potato, chopped
• 1 tsp cornflour
• 5 boiled grated potatoes
• 1/4 tsp salt
• 1 cup cheese, grated
• oil for deep-frying
Method
Heat oil in a pan, add garlic and allow it to brown.
Add chilli flakes, oregano and a pinch of black pepper.
Add a cup of water and salt and allow it to boil.
Incorporate rice flour slowly to avoid any lumps and cook till it leaves sides of the pan.
Transfer the mixture to a glass bowl and allow it to cool.
Add grated boiled potato in the mixture.
Add cornflour and salt, and mix it well.
Divide a little portion of potato mixture and add cheese into it and mix well.
Make a neat cylinder of cheese-potato mixture, similarly make another cylinder of just chopped boiled potato.
By using cornflour, with the help of your fingers flatten the potato mixture and slide in the cheese potato cylinder to stuff inside the potato mixture.
Divide the potato mixture into two and further make cylinders.
Cut this into bite-size tots, alternatively shape this into balls. (For better results deep-freeze these tots till frozen). Deep-fry these potato cheese bites in medium hot oil till crispy and golden brown.
Serve hot with your favourite dipping sauce.
