Aloo Bhajiya

Ingredients

• 2-3 raw potatoes

• 2 cup besan

• 1/4 cup rice flour

• 1/4 tsp turmeric powder

• 1/4 tsp ajwain

• 1/2 tsp red chilli powder

• 1 tsp chilli flakes

• 1 tsp fresh ginger-garlic paste

• 1 tbsp chopped coriander leaves

• pinch of hing

• water as required

• oil for frying

To serve

• chai

• green chutney

• sweet chutney

Method

In a bowl, combine besan, rice flour, ajwain, chilli flakes, chilli powder, turmeric powder, hing, ginger-garlic paste, coriander leaves, and mix it well.

Now add water and make a batter.

Slice the potato using a mandoline slicer.

Heat the oil in a deep-bottom pan. Dip potato slices in the batter and deep-fry them until golden brown in colour.

Serve hot with chutney and chai.
