Kumatiya Jor Garam Chaat
Ingredients
• 1 cup kumatiya seeds
• 2 tbsp chopped onion
• 1 tbsp chopped raw mango
• 3 fresh red chillies, finely chopped
• 2 tbsp chopped fresh coriander leaves
• 1/2 tsp red chilli powder
• 1/2 tsp roasted jeera (cumin) powder
• 1/2 tsp amchur (dry mango) powder
• 1/2 tsp kasuri methi
• kala namak (black salt) to taste
• 1/2 tsp lemon juice
Method
Take kumatiya in a bowl, wash thoroughly and soak in warm water overnight (or for 6 hours).
After soaking, drain all water and keep kumatiya in the strainer. Now take a kitchen towel and dry it gently.
Keep aside.
Now take a small mixing bowl, add red chilli powder, roasted cumin powder, dry mango powder, black pepper powder, kasuri methi, kala namak, then mix it well and keep aside.
Then heat the ghee and fry, the kumatiya will get nice and crisp in texture.
Remove it into a mixing bowl, sprinkle the mixed masala powder immediately and mix it gently.
Then add chopped onion, chopped chilli, chopped raw mango, chopped coriander and also squeeze some lemon juice on it. Mix it well.
Your Kumatiya Jor Garam Chaat is ready to be served as an evening snack or when you are craving something tasty.
You can garnish with fresh anardana and aloo gujiya to add more flavour.
