Spiced Papaya Raisin Chutney
Ingredients
• 2 tbsp vegetable oil
• 1 large sweet onion, chopped
• 2 cloves garlic, finely minced
• 1/4 cup cider vinegar
• 1 cup packed light brown sugar
• 3 tbsp fresh lime juice
• 1 tbsp fresh ginger, minced
• 1/2 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1/8 tsp ground all-spice
• 1/4 tsp kosher salt
• 3/4 tsp dry mustard
• 5 cups papaya, peeled, seeded, and finely chopped
• 2/3 cup golden raisins
Method
Heat oil in a large, heavy saucepan over medium to medium-low heat. Add onion and sauté for 2 minutes. Add garlic and sauté for 1 additional minute, stirring often.
Add cider vinegar, brown sugar, lime juice, ginger, cinnamon, nutmeg, all-spice, salt, and dry mustard. Stir until well-combined.
Add papaya and raisins. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
After 5 minutes, remove from heat and cool to room temperature.
Chill for 2 hours in the refrigerator before serving. Refrigerate any leftovers in a covered glass container.
